Cajun-Style Andouille Vegetable Bowl

  • 1 package 13oz Kiolbassa Cajun-Style Andouille Smoked Sausage, 1-inch coin slices
  • 1 head broccoli, small slices
  • 1 carrot, long slices
  • 1 red bell pepper, 2-inch slices
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp salt
Sauce Ingredients
  • ¼ cup sour cream
  • 2-3 clove garlic, minced
  • 1 tbsp lemon juice
  • ¼ tsp salt

Directions

  • Preheat the oven to 425°F.
  • Grease a large full size sheet pan (26’x18’), and place sliced Cajun Andouille Smoked Sausage on one side of the pan. Place them close to each other but avoid overlapping them on top of each other.
  • In a large bowl, add slices of broccoli, carrots, and red bell peppers. Then drizzle with olive oil, garlic powder and salt. Toss to combine.
  • Place vegetables onto the other side of the sheet pan.
  • Send sheet pan into oven and bake for 20-25 minutes, or until vegetables are tender and cooked.
  • Whisk to combine garlic sauce ingredients in a small bowl.
  • Divide sausage and vegetables among 4 bowls, drizzle each bowl with garlic sauce.
  • Serve and enjoy!
