What Does “Dry Cured” Mean?

Dry curing is a premium curing method in which the cure is applied externally to pork belly for a meatier, bolder flavor. Dry cured bacon also tends to shrink and splatter less than average bacon. Many bacon manufacturers inject a water-based curing solution into the pork belly which creates more shrink and splatter. Unlike our competitors, we do not inject water into our bacon.
