When you’re in the mood for comfort food, this crockpot minestrone soup is guaranteed to hit the spot. The bold taste of Kiolbassa Roasted Garlic sausage adds the perfect, hearty flavor to this classic recipe. Recipe courtesy of Rachel Schultz.


  • 13 ounces Kiolbassa Roasted Garlic Sausage
  • 4 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, minced
  • 24 ounces canned diced tomatoes, with juice
  • 8 cloves garlic, minced
  • 15 ounces white beans
  • 1 parmesan rind
  • 15 ounces kidney beans
  • 6 cups vegetable broth
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1 teaspoon pepper
  • A dash of red pepper flakes
  • ½ pound small pasta (this recipe used orecchiette)
  • 2 zucchinis, diced
  • 2 cups spinach
  • Optional toppings:
    • Grated parmesan
    • Fresh basil

Serves: 8 people


  1. Place Kiolbassa Sausage, carrots, celery, onion, tomatoes, garlic, white beans, parmesan rind, kidney beans, broth, oregano, parsley, pepper, and red pepper flakes into a slow cooker. Cook on low for 6 hours.
  2. When 30 minutes of cook time remains, add pasta and zucchini. Stir in spinach.
  3. Serve topped with basil and grated parmesan.
